Here are some of my ideas (and recipes) for various meals made with a single Saturday morning “meal prep”.

Heat up the broth from this recipe (you will have a good 6 cups of rich stock), add soup pasta, rice or couscous and some bits of meat for a quick soup!

Description
Take about 1 hour of your Saturday morning and get into quick and easy chicken meal prep. Using the Instant Pot® or the stove top, you can have 6 pounds of cooked chicken ready in 15 minutes.
Ingredients
6 lbs of bone-in skin on chicken. Two large chicken breasts and 4 large thighs.
11/2 tb of Lipton® Recipe mix for chicken dishes or regular powdered soup base (the Lipton®recipe mix can only be found in certain markets. Look in the Latino section which is where I nearly always find it)
Large yellow onion, diced
1 tablespoon of Bell’s® All Natural Poultry seasoning (salt and GMO Free)
2 large stalks of celery in chunks
1 tablespoon of multi-color peppercorns, whole
1 1/2 teaspoons sea salt
Some parsley, a bay leaf or just a good bunch of celery leaves
Water to cover or to the 10 cup line
Instructions
Set the Instant Pot® to the “Meat/Stew” setting. 15 minutes in the pressure cooker mode.
Cancel cycle after beeper.
No need to keep the meat on the Low setting.
If you prefer, you can also prepare the meat on the stove top in a large Dutch oven. Simmer for at least 2 hours.

Notes: Alternatives to the Lipton® recipe mix include Knorr® granulated bouillon and the Orrington Farms® seasonings.

Not Just Ceramic Knives…
A couple years ago, I treated myself to a set of ceramic kitchen knives. They have a reputation for being razor sharp but little did I know how sharp that was until I noticed that I had cut a finger and part of a nail without feeling it. Please don’t do that. Get the protection you need when cutting and slicing meat and vegetables.
I immediately bought cut resistant gloves for myself and for the boys because they love to cook at home. Quesadillas (another recipe idea) is a family favorite and you guessed it – they cut quite a bit of grilled chicken!
Recipe Time: Easy Chicken Meal Prep Is Done!
The meat is finally cool enough to handle!
Transfer to a large platter to carefully debone and cut the chicken pieces.
Separate into freezer bags. Make it easy by using the bag holder with 4 legs (keeps the bags open wide) to keep everything steady as you add the meat.
