Beef Top Loin Roast – When was the last time you prepared a tender and juicy roast beef top loin recipe? And… how often do you come across the perfect sized boneless cut of roast beef at a fantastic price? In a supermarket?
Loin of Beef is a tender cut of beef not often available in small roasts, especially as a boneless roast weighing in just under three pounds.
A small roast is perfect for two of us with a minimum of leftovers or three of us with nothing remaining to wrap and refrigerate.
And so it was last week that my menu flipped on a dime. Nothing new here.
For this recipe, regardless of the cut of meat you find, you want to be able to brown the loin of beef in a pan (like a monster steak) and finish the cooking to preferred “doneness” in about 20 minutes to half an hour at most.
Roast Beef Top Loin Dinner
Ingredients:
- 4 slices of bacon ends and pieces, chopped into small lardons
- 6 medium potatoes, scrubbed and cut into large pieces
- 1/2 pound of organic carrots, cut into 1 1/2 inch pieces
- 2 leeks, washed, scrubbed and cut into large pieces
- 2 small turnips, cut into quarters
- 2 large shallots, minced
- 4 large cloves of garlic, minced
- Olive oil
- Salt and pepper
- butter
- fresh herbs: sage. thyme and rosemary
- 3 lbs of beef top loin
