It’s a good thing there are so few in a container otherwise I would look like a glutton.
These lemon shortbread cookies – sablés in French – reminded me of the Balducci’s shortbread cookies. Both are melt-in-your-mouth treats rolled in coarse sugar crystals.
Lemon flavored, chocolate covered or coated with powdered sugar, these cookies come in all kinds of disguises. My personal favorite is the plain shortbread. With a steaming cup of Earl Gray. Yes, you can roll them in sugar crystals if available but the sugar sparkle and crunch is totally optional. Pas nécessaire du tout but the wee bit of glitter just makes the cookie that much more enticing.
Speaking of shortbread cookies, I’m now on the lookout for recipes to duplicate our favorite cookies in healthier versions…versions which our Maman could eat on a gluten free and sugar free diet. They do exist and look just as addictive.
Beyond the lemon flavored variety, I found gluten and sugar free, almond orange, raspberry lemon and pecan shortbreads.
I mean really…even the famous brand from Ireland Walker’s offers a box of their shortbreads to fit a various special diets.
This time of year is synonymous with cookies. I’m already looking forward to a cookie swap with friends later this month, and of course Clara and I have to make cookies for Santa. She loves to help cook anything, but I’m pretty sure cookies are her favorite…
