80/20% ground beef (1 lb.) or ground lamb
Bulk sausage – plain or mild Italian (1 lb.) or 1 lb ground lamb
2 small onions and 1 large shallot, diced
Greek seasonings, to taste
Black pepper to taste
Sea salt, to taste
For a true Moussaka, I would use all ground lamb. Remember that this particular recipe was a “clear out the fridge” recipe so I improvised with many of the ingredients! I mostly used what I had on hand – the Rao’s® (a pantry staple), the t’s an exercise in using ingredients I had on hand – how often do you have baby eggplants and nearly all the required ingredients – mostly leftovers? Time to get creative with a little bit of this and some of that.
