Easy Moussaka Casserole – It’s Friday the 13th.  Why not clear out the fridge and use a few shortcuts (leftovers) to cook up a what is normally a time consuming recipe?

I bought 3 small eggplants earlier this week.  One was sliced and sautéed as a side dish for grilled pork chops.   The other two are the base for an easy Moussaka casserole.

Easy Moussaka Shortcuts?

Ever made authentic moussaka from scratch? You will consider this recipe a definite shortcut but one that still results in authentic flavors.


Psst… I’m still wondering why I labeled my recipe below as “easy”.  Sure thought it was as I was preparing it.

This one also much lighter than the original recipe as it does not include a rich Béchamel sauce.  I’m going to let my favorite Rao® sauce take center stage.

 Greek Freak BBQ Rub and Seasoning – Mediterranean Spice BlendThirty minutes max to prepare the meat filling and prepare the eggplant is quick especially when the remaining ingredients required to assemble the casserole are all leftovers found in the fridge.

You will have to allow about an hour or so in the oven to make sure the eggplant is cooked through and fork tender.

My problem?  I should have used a slightly larger rectangular dish instead of a round casserole dish.

A 9 by 13 inch oblong baking dish would have been perfect for the quantity of meat sauce that covered two 8 to 9″ eggplants like these – cut in half !

Rao’s® Tomato Basil Sauce or Marinara

80/20% ground beef (1 lb.) or ground lamb

Bulk sausage – plain or mild Italian (1 lb.) or 1 lb ground lamb

2 small onions and 1 large shallot, diced

Greek seasonings, to taste

Black pepper to taste

Sea salt, to taste

Parsley, oregano

For a true Moussaka, I would use all ground lamb.  Remember that this particular recipe was a “clear out the fridge” recipe so I improvised with many of the ingredients!  I mostly used what I had on hand – the Rao’s® (a pantry staple), the t’s an exercise in using ingredients I had on hand – how often do you have baby eggplants and nearly all the required ingredients – mostly leftovers?  Time to get creative with a little bit of this and some of that.
