- 4 lbs. boneless/skinless chicken thighs
- 2 medium yellow onions, sliced
- 1 tablespoon fresh chopped garlic
- 1 (14.5 oz.) can of diced tomatoes – do not drain
- 1/4 teaspoon cumin
- 1 tablespoon chopped parsley
- 2 teaspoons ginger paste
- 3 tablespoon curry paste
- McCormick’s Montreal Chicken Registered TM (lightly season the chicken pieces)
- Freshly cracked pepper to taste
- 2–3 tablespoons Canola Oil
- 2–3 tablespoons salted butter
